It really isn’t.

It was about time for me to prepare one easy and fast recipe for the blog. And, to be honest with you, the recipe for this homemade bourbon vanilla ice cream wasn’t something that I planned to share with you in the first place because this is so straightforward and easy to make.

When making desserts at home, I usually prepare simple and rustic desserts that go perfectly with a scoop of ice cream. Like my apple crumble or mini strawberry galettes.

Now, let’s be honest: in stores, there are so many different types and flavors of ice cream that I probably wouldn’t have the time to try out for my entire life.

But ever since I discovered the trick with condensed milk, I simply can’t resist making ice cream with some of my own twists from time to time. Last year I made ice cream with lemon curd and strawberries and one with whiskey and cherries, but I thought that those of you who like to read my blog and try my recipes would like to try a good, old classic that everyone loves:

We foodies who are living squeezed in tiny apartments are having a big problem: our kitchen is always too small, we don’t have room for all the kitchen appliances we would love to have, the bigger working surface would also be awesome…. and how cool would be to have a DISHWASHER, right?

So, you see, I don’t have enough room in my kitchen for an ice cream machine.

And I want to make the ice cream at home so badly!

That, my friend, is where we come to an ingenious homemade ice cream recipe that consists of only 3 ingredients: heavy cream, condensed milk, and bourbon vanilla bean.

What is Condensed Milk?

Simply put, condensed milk is a type of sweetened cow’s milk from which about 60% of the water has been removed. It has a characteristic beige color, it’s thick and in itself quite sweet. As such, it is great for making no-churn ice cream without eggs because the amount of crystals we get in the final product is minimal.

It is incredibly versatile and can be used in a handful of different, mostly sweet recipes. For example, we can use it to:

  • sweeten coffee and hot drinks
  • make semifreddo
  • ice creams
  • fudge
  • homemade dulce de leche
  • pies
  • tres leches cake
  • puddings

and in many more recipes!

So, how to make no-churn vanilla ice cream at home?

To make this ice cream, besides condensed milk, you need to buy heavy cream. I really recommend using the real thing, not the products like Halta otherwise the final outcome will not be that good.

Heavy cream must be chilled in the fridge before use, otherwise, it won’t whip properly. When whipping, be careful not to overwhip! Using a rubber kitchen spatula is the easiest way to fold in the rest of the ingredients. For freezing the no-churn ice cream I like to use just a regular loaf pan.

No-Churn Bourbon Vanilla Ice Cream

Ingredients
  

  • 250 ml condensed milk
  • 500 ml heavy cream (chilled)
  • 1 bourbon vanilla bean (or 1 tbsp vanilla extract)

Instructions
 

  • Put the heavy cream in a bowl and beat until stiff peaks form. Cut the vanilla pod in half with a small, sharp knife, carefully scrape off the seeds, and add them to the bowl with whipped cream. Then gradually add the condensed milk and fold everything with a spatula.
  • Transfer to a plastic or metal container, cover with plastic wrap, and leave in the freezer for at least 8 hours.
  • Serve in a bowl with your favorite topping, with some pancakes, crumble, or in a cone. Enjoy! 🙂

Notes

  • When you decide to serve this ice cream, take it out of the freezer about 10 minutes earlier to make it easier for you to scoop out the balls. Keep an ice cream scoop in hot water before forming balls. This should make it easier for you to take out the balls and serve.
