Oven-Baked Stuffed Sweet Cheese Crepes

Do you have some leftover crepes? Make these delicious lemony oven-baked sweet cheese crepes! The creamy sour cream layer blends perfectly with the lovely sweet cheese filling. These crepes are great when served both warm and cold.

  • 1 ceramic casserole dish 23cm x 36cm x 6,5cm

Ingredients
 
 

CREPES FILLING:

  • 10 crepes
  • 400 g soft fresh cheese (ricotta-like)
  • 3 eggs  (M size)
  • 100 g granulated sugar
  • 1 lemon (zest only)
  • 10 g bourbon vanilla sugar
  • pinch of salt

TOPPING:

  • 250 g sour cream
  • 1 egg  (M size)
  • 10 g granulated sugar

ADDITIONAL:

  • extra butter (for greasing the ceramic baking dish)

Instructions
 

  • Preheat the oven to 180°C (356°F), and grease the ceramic baking pan with butter.
  • For the filling, rub the grated lemon zest into the sugar with your fingers. Then add the bourbon vanilla sugar, eggs, cheese, and a pinch of salt, and mix everything well.
  • Mix sour cream, egg, and sugar for the topping and set aside.
  • Spread about 3 tablespoons of the filling on each crepe, roll it up tightly, and place them seam-side down.
  • When you've assembled all the crepes in the baking dish, pour the prepared topping over them evenly. Bake in the oven for 20-25 minutes.
  • When done, take them out of the oven and let them cool for about 10 minutes. Then they are ready to serve. Dobar tek!
