Ingredients For Stuffed Cheese Crepes
- Crepes – They can be freshly baked or from the day before. If you don’t have a tried-and-true recipe, I recommend you try this basic Croatian crepe (palacinke) recipe from the web. They are similar to French crepes but better!
- Soft fresh cheese – In Croatia, we like to use farmer’s fresh cheese in many sweet and savory recipes. It’s a very common ingredient in our stores. Although I do not know what types of fresh cheese are available in your country, I will give you some suggestions for replacing fresh farmer’s cheese. Soft fresh cheese, ricotta-like, made exclusively from cow’s milk or cottage cheese can be used in this recipe, too.
- Eggs – they bind the ingredients and enrich them nutritionally. And no, you can’t replace them with anything else, sorry.
- Sugar – I use granulated white sugar, bourbon vanilla sugar, and lemon-flavored sugar. Instead of white sugar, you can also use coconut sugar or demerara brown sugar, but keep in mind that this will change the final color of the baked cheese crepes.
- Lemon – you only need grated zest. The lemon must be organic.
- Sour cream – we need it for making creamy topping for the crepes. The fattier, the better. You could use creme fraiche, too.
- Salt – you only need a good pinch of salt that will emphasize other flavors.
How To Make Oven-Baked Stuffed Cheese Crepes

STEP 1: Prepare the cheese filling
Rub the grated lemon zest into the sugar with your fingers for the filling. Why should you do that? Well, rubbing the lemon zest evenly distributes its aroma throughout the cheese filling and releases its natural oils.
After that, add the vanilla sugar, eggs, cheese, and a pinch of salt, and mix everything well.
STEP 2: Prepare the topping
Mix sour cream, egg, and sugar for the topping and set aside.
STEP 3: Assemble the stuffed crepes in the baking dish and pour over the creamy topping
Spread about 3 tablespoons of the filling on each crepe, roll it up tightly, and place it seam-side down in the baking dish. Depending on the size of the baking dish you will use, you may have to squeeze them a bit to fit them all.
Then pour over sour cream topping.
STEP 4: Bake and serve
Bake the stuffed cheese crepes in the oven for 25 minutes. When done, let them cool for about 10 minutes. After that, they are ready to serve!
Some Tips and Filling Suggestions
- If you wish, you can add some raisins soaked in rum to the cheese filling.
- You can also use some other type of spread for oven-baked Croatian crepes: no-pectin apricot jam or oven-roasted plum jam would be an excellent choice!
- Instead of sweet cheese filling, our Croatian grandmas sometimes used ground walnuts or almonds mixed with sugar as filling. If that sounds good to you, give this idea a try!

Oven-Baked Stuffed Sweet Cheese Crepes
Equipment
- 1 ceramic casserole dish 23cm x 36cm x 6,5cm
Ingredients
CREPES FILLING:
- 10 crepes
- 400 g soft fresh cheese (ricotta-like)
- 3 eggs (M size)
- 100 g granulated sugar
- 1 lemon (zest only)
- 10 g bourbon vanilla sugar
- pinch of salt
TOPPING:
- 250 g sour cream
- 1 egg (M size)
- 10 g granulated sugar
ADDITIONAL:
- extra butter (for greasing the ceramic baking dish)
Instructions
- Preheat the oven to 180°C (356°F), and grease the ceramic baking pan with butter.
- For the filling, rub the grated lemon zest into the sugar with your fingers. Then add the bourbon vanilla sugar, eggs, cheese, and a pinch of salt, and mix everything well.
- Mix sour cream, egg, and sugar for the topping and set aside.
- Spread about 3 tablespoons of the filling on each crepe, roll it up tightly, and place them seam-side down.
- When you've assembled all the crepes in the baking dish, pour the prepared topping over them evenly. Bake in the oven for 20-25 minutes.
- When done, take them out of the oven and let them cool for about 10 minutes. Then they are ready to serve. Dobar tek!
